TVC Eats: My Favourite Pasta Dishes

I live for pasta. That is no secret. If there is one dish I can eat every day, for every meal, for the rest of my life, it's pasta. 

So I thought (since who isn't always craving carbs these days) I would show you a few of my favourite pasta recipes. 

The first one I love making is my veggie linguine - it's the most simple of them all! It's a Martha Stewart recipe I found online (link here for the curious). It's perfect for a quick dinner and no fuss! 

I love it on days when I just can't be bothered prepping meat. I'm not a big meat eater (with my diet solely on chicken and fish and no red meat ever) but I do indulge in a little bacon from time to time.

Which brings me on to my next recipe... 

I love this chicken pesto pasta with bacon. It's a Marry Berry recipe that I added some chicken too. (Here's the link) It cooks surprisingly quickly and it's a great dish to go from pan to table in less than 30 mins. This is a great one for summer garden parties when you can just place the pan on the table and let people dig in at leisure.

They do say that you save the best for last, and this really is my favourite meal ever. It's my garlic and lemon chicken pasta with homemade garlic bread. 

This one is a winner if you are a massive garlic fan like myself. It's as simple as cooking your spaghetti in salted water until fully cooked (I hate al-dente pasta as I have really sensitive teeth and the feeling drives me insane) and cooking your chicken in a pan with some olive oil, rosemary, salt & pepper, basil & oregano. (About half a teaspoon of each - I don't do measurements!) and cooking until it is fully white all the way through. Then I add a cup (or a mug) full of boiling water and a full juice from a lemon to the pan and let it reduce into a sauce while I add my cooked pasta to the pan. 

When you add the pasta to the water in the pan with the chicken, the starch from the pasta combines with the water to create a sauce which it really delicious. Let it simmer all the way down until it has thickened and there is no running water and you are good to go.

I like to add some vine cherry tomatoes to the pan while it is cooking as I love the taste and a sprig of fresh basil as it is my favourite taste in the world. 

While you are doing that, here is a foolproof cheats way to 'homemade' garlic bread that will make you fell like Nigella Lawson...because who has the time to make a ciabatta these days?! 

'Homemade' Garlic Bread

  • Cut a fresh ciabatta in half lengthways
  • Melt some butter in the microwave (or over a stove) till fully melted
  • Add some crushed garlic,  dried oregano, basil and some seasoning to the butter and mix
  • Place ciabatta cut side down under a hot grill for a few minutes to crisp up
  • Remove from the grill and using a pastry brush, saturate the cut side of the bread in the butter mix.
  • Grill to preference

TVC Life: Meet Peach The Puppy!

Well, what a whirlwind the last few weeks have been. I've been on a magical journey with my brand new, just out the wrapper, puppy. Meet Peach! 

Peach is a 12 week old, Border Terrier, with a love for naps and slippers. She has such a lovely little personality forming already and I can't wait to grow with her. She is such a friendly natured dog, who loves cuddles from everyone!

Her long legs make me feel all kinds of love. She's sort of like a teenage boy with her small body and massive limbs, but I think it fits her character perfectly. 

She is now fully vaccinated and had been out her first set of walks in the countryside. She is such an outdoorsy dog! There is nothing better than seeing her little face light up when she is running through the grass and jumping in the river. 

However, she loves nothing more than cuddling up with her blanket on my lap. She has somewhat of a stubborn nature, so she is very like myself. But the cute little face was will worth the four-hour drive to get her!
